Blackcurrant jam

I haven't eaten jam since I was little and when my mother made large quantities of these delicious beans. In the mountains, where my grandmother's parental home is, there they had everything: red and black currants, blueberries, sharp, raspberries, blackberries. Paudure fruits, very tasty.

Unfortunately, we didn't find them on the market, but in the supermarket we came across small pots of black and red currants, the top of Romanian origin, but exaggeratedly expensive.
I also took a few casseroles, enough to be 1 kg of beans and I said to make a jam, so for the morning, on toast.
That's how I feel that it's summer and that it doesn't pass without doing something with currants. If I also find tomatoes, I make something out of them too.
I didn't weigh the sugar, I added it like that.

So, I cleaned the beans, I overturned them in a pot, I poured a bit of water, juice of half a lemon and sugar, to say the least 300 grams.
I let it simmer, palpate and perfume the kitchen with a late summer scent.
When the jam was well bound, I took it off the fire and poured it into jars.

  1. Put water and sugar in a saucepan, leaving them to boil, over low heat, so that the latter melts. Once the syrup is obtained, put in the pan the mulberries and the grated orange peel.
  2. The jam should boil for 7-8 minutes, until the fruit softens. Remove the foam and mix continuously to homogenize the composition. When the fruit has the right texture, you can put the jam in jars.
  3. Screw the lid on, leave the containers upside down for 10-15 minutes, then place them in the normal position, taking care to wrap them with a blanket. Leave them to cool until the next day, when you can move them to the pantry.

So it's not that hard to prepare one dude jam, as you could see. We guarantee that you will fall in love with its taste, which will remind you of berries!

Blackcurrant Syrup, 250 ml, Divine Star

Blackcurrant syrup is obtained by cold maceration and fully preserves the healing properties of blackcurrant fruits (especially the content of vitamin C which is very easily destroyed by boiling). Blackcurrants are very rich in vitamins C and A in potassium and calcium salts.
Sugar free.

Cold extract from fresh blackcurrant fruits 70% invert sugar deionized water.

Tonic purifying relaxing antioxidant of blood vessel walls. It is recommended as an adjunct in: asthenia, stress, fatigue, visual disturbances, capillary fragility, varicose veins, hemorrhoids, urinary tract infections and hypertension, having diuretic properties. What is red currant wine and how is it prepared

Blackcurrant wine is a good diuretic and a remedy for diseases of the kidneys, liver and heart, it cleanses the blood of toxins and strengthens the body's immune system, being effective in case of diabetes.

It has been known since the Middle Ages about the existence of red currant wine as a natural remedy used in medicine at that time. The first time this wine, called cr & egraveme de cassis was created by some French monks & icircn 16th century, being used as a remedy for jaundice.

It has a high concentration of vitamin C (150mg per 100g) with many health benefits, being indicated for reducing the number of free radicals in the body. It has more antioxidants than red wine and black tea, and blackcurrant has twice as many antioxidants as red tea.

The dark red color of red currant wine is due to anthocyanin, considered a preventative for heart disease, which contributes to blood circulation, increasing blood flow. Consumption of red currant wine increases brain function and has even been suggested to contribute to prolonging life. The specific aroma of red currant wine is also considered to relieve stress.

Production of red currant wine & icircn domestic conditions

Ingredient: to prepare this product you need 1kg of black currants, 2.5 l of boiled and cooled water, 1.4 kg of honey, 2g of wine yeast, a 5L jug with a special stopper and some auxiliary tools.

Method of preparation: Mix the water with the honey and water until the honey is completely dissolved. Set aside about 300ml of water with honey and pour the rest over the crushed fruit. & Icircn the water set aside dissolves the wine yeast. Pour water over the currant wort. Cover the composition with a cloth and leave it somewhere in the house for 5 days. Shake the vessel lightly once a day. During this time the yeast will be very active, and the emission of carbon dioxide will increase, which is favorable, it protects the must against bacterial contamination.

At the end of the 5 days, the broth must be prepared, cleaned and sterilized. Wash the glass carafe well with water, rinse well, well, then put in the oven for 30 minutes at a temperature of 110-130 & degC. It must then be cooled to room temperature before pouring the wine into it.

The blackcurrant mixture is strained into a sterilized bucket using a fine, sterilized sieve. Squeeze as much liquid as possible, then discard the rest of the pulp. There is also a much simpler recipe to prepare red currant wine & icircn home conditions. In this case a liter of red wine, 1.5 kilograms of currants and 450g of brown sugar are used. Wash the fruit well, crush it and put it in a glass jar, over which the wine is poured. The jar is hermetically sealed and left to soak for 24 hours. Then the mixture is filtered and the juice obtained is boiled together with the sugar. C & acircnd the mixture has reached boiling point, turn on low heat and leave for 5 minutes, then pull pull the pot off the heat and put to cool. When the mixture is completely cooled, it is filtered once more and stored in glass containers, hermetically sealed in a cool place.

Usually red currant wine is administered with about 1 glass 3 times a day, 30 minutes before a meal.

Cranberry jam - recipe

Ingredients: 1 kg blueberries, 1 kg sugar, juice from a small lemon.

Preparation of blueberry jam: clean the blueberries from the tail, wash with cold water and drain. When the jam starts to set, put it in threaded jars and leave it covered with beds until it cools down.

Ingredients: 1 kg sugar, 600 g strawberries, 250 ml water, lemon juice.

Preparation: it is preferable not to wash the strawberries, because they are very fragile if you really want to do it, do it with great gentleness. Put water and sugar in a saucepan with thick fu-nd, on the fire.

After boiling for 2-3 minutes, add the strawberries and reduce the heat to low. Gather formed foam. Add the lemon juice and let it boil for another 5 minutes, then put the jam in the jars, screw the lids on and cover them with a towel.

The next day, after they have cooled, you can store them in the pantry.

Ingredients: 1 kg raspberries, 1 kg sugar. Preparation: wash the raspberries carefully and put them on a sieve to drain, then mix in a saucepan with the sugar and leave to cool for about 3 hours.

After that, bring to a boil over low heat. From time to time the pan is shaken and the foam is removed, as it is formed. When it starts to bind, take a teaspoon of the juice and put it in a glass of cold water to check if it is thick enough.

If the syrup makes a thin thread, which is spread in the glass, it means that it is ready and is removed from the heat. If not, leave. Pour hot into jars, and they close tightly.

Redcurrant jam

Ingredients: 1 kg sugar, 1 kg red currants, 30-50 ml lemon juice, 1/2 liter of water. Preparation: the jam is made from red, white or black currants with larger berries, which have only 1-2 seeds.

Currants contain a large amount of pectin (which clogs the syrup), so only 1 kg of sugar is added to the currants that result from one kg weighed, after the berries have come off the bunches.

Then remove the seeds with a toothpick or a thin stainless wire, bent like a hairpin. Put the fruit, sugar, lemon juice and water on the fire and boil without binding too much.

It will result in a large amount, but when it cools, it will gel with the fruit.

Ingredients: 1 kg sea buckthorn berries, 800 g sugar, 700 ml water.

Preparation: wash the fruit well. Prepare a syrup from water and sugar, boiled for about a quarter of an hour. After the syrup binds, add the sea buckthorn fruits and stir from time to time. Take the foam when it forms.

Leave it to boil until it is well bound and has a dark orange hue. Put it in hermetically sealed jars, cover, leave to cool and then store in the pantry.

Ingredients: 1 kg blackberries, 1 kg sugar, 200 ml water, two tablespoons lemon juice, vanilla essence.

Preparation: wash the blackberries and drain well.

Mix water, sugar and lemon juice and bring to a boil until a well-bound syrup is obtained. Add the blackberries and continue cooking for another 30-35 minutes.

Towards the end, add the vanilla essence. Put hot in washed and sterilized jars.

Tricks for a perfect jam

It is made in small quantities (1-2 kg).

The combinations of berries are very good: raspberries, blackberries, blueberries.

Choose fresh and untreated fruits.

Prepare them the day you bought them.

The jam binds better if half of the sugar is put near the end of the boiling period.

If you want to know when it's almost ready, soak a tablespoon in the boiling liquid and drop a few drops on a plate.

If the liquid flows like a thick syrup, it must boil, but if it forms dense drops and sticks to the plate, the fire must be extinguished.

To speed up the "binding" of the jams, put an apple stalk, along with seeds and peel, in a gauze bag and dip it in the jam on the fire.

It is rich in pectin and will speed up the preparation of jam naturally.

To avoid smoking or burning the jam, put some clean stones in the pan in which it will be prepared.

The red fruit jam comes out much more aromatic if at the end you put some fresh fruit. If you do not want the jams to darken in color, add vitamin C pills during boiling, about 500 mg / 0.5 l composition.

Use thick fu-nd dishes.

If you don't want the jam to make any more moldy pudding on top, put it immediately after it has been taken off the heat in hot jars and turn them upside down.

Cover them with a blanket and let them cool slowly.
